Egg Cups

Looking for a quick, make ahead breakfast recipe? These egg cups are a great choice! You can whip up a big batch of them as you have time and reheat them whenever you need them! The best part is, they are adaptable to whatever you want to add to them. Add extra veggies for you, extra bacon for the hubs and cheese for the kids- whatever you like! For this batch, I added spinach and leftover ham that I had from Christmas dinner that I’m finally pulling out of the freezer.

Ingredients:

Eggs (one per muffin cup)

Fixin’s (bacon, ham, sausage, veggies, cheese- pretty much whatever you like!)

Directions:

Preheat oven to 400 degrees

Grease muffin tin

Put protein and veggies in each tin opening no more than 1/3 full

Crack one egg on top of each tin opening

Add cheese on top if desired

Bake in oven about 10-15 minutes or until no longer runny

Can be enjoyed immediately or refrigerated for later use
