This is a warm-you-to-the-bones chili that isn’t really a chili. It is fix it and forget it style: simmering away all day in the crock pot. You can change the flavors by mixing up the spices but it is a great way to get your kids (or husband) to eat their veggies without noticing!
Ingredients:
2 lbs ground beef or bison
3 cups kale
1 bag frozen carrots
1 onion
garlic
1 large can tomato sauce
basil
oregano
parsley
salt
pepper
Directions:
Set slow cooker to low. Place ground beef in slow cooker (no need to brown ahead of time, but you can if you’re short on time or just like those extra caramelized flavors!)
If you are trying to hide the veggies, pour tomato sauce, carrots(thawed), onion, kale and garlic into blender and blend until smooth. Otherwise, just pour all ingredients over beef as is and crumble together.
Add seasonings and cook on low about 8 hours. This can be made ahead and rewarmed as well. It just continues to get better as it sits and the flavors mingle!
