Twice-baked spinach-stuffed sweet potatoes with eggs

An easy to make breakfast meal that cooks while you are getting ready.

Ingredients (per person):

1 sweet potato

1/2 cup spinach (raw or frozen is fine)

1 egg

Clarified butter or ghee 1Tbsp

Salt and pepper to taste

 

Directions:

Preheat oven to 425 degrees F.

Bake sweet potato. Can be done ahead of time or done quickly in the microwave (about 5 minutes for 1 potato).

Split sweet potato and scoop insides out into a bowl.

Add Spinach and ghee and mix together until well combined.

Scoop out and put back into halves of sweet potato, leaving a hollow in the middle in which to place the egg.

Crack egg into hollow. Bake at 425 degrees for 10-15 minutes depending on how runny you like your egg.

Season as desired and enjoy!
