Picnix Bistro Carry Out - Lunch

It’s cold out and what better time to make a delicious soup? I had ham leftover in the freezer from Christmas and it is time to use it or lose it. So, why not an easy, warming Ham and Pea soup recipe?

This soup comes together quickly but it’s flavor grows as the ham mixes with the pea base, so I like to make it ahead and then let it simmer or wait overnight and reheat.

Ingredients:

1 bag of frozen peas
1 bag of frozen carrots
1 carton chicken stock
2 cups ham, cut into bite-sized pieces (or more if you like your soup very meaty)
1/4 of an onion (or onion powder to taste)
4 cloves roasted garlic (see how I make it here)
1 rib celery (or celery salt to taste)
2 tbsp butter
2 tbsp heavy cream (optional- adds a little extra something)

Directions:

Place butter into bottom of a large stock pot. Add Onion and Celery (if using fresh) and allow to cook down until soft.
Add Chicken Stock and bring to boil.
Add Peas and Carrots and allow to simmer until cooked through.
Add Roasted Garlic.
Use an immersion blender to blend together until smooth.
Add Ham and simmer until heated through.
Add Heavy Cream and stir until blended.
Allow flavors to mingle together and serve.

    1. I believe it would. It is minimal dairy and mostly just the broth and veggies which generally freeze fine. I’m sure you could freeze before adding the cream and then stir in on reheating as well! Thanks for the great idea!
