Menu Plan March Weeks 3 and 4

I feel like I’ve fallen off the face of the earth for a week! Between inventory at work and multiple schedule changes, I haven’t had time to think, much less write!

I did get a chance to make it to the store, so I will share my menu plan for the week- but I didn’t plan as well as I normally do, so I think next time I will have to buckle down and get back to basics on planning a healthy menu.

I’ve been eating through what remains in my pantry and freezer but I still have a TON of stuff I need to eat before it goes bad. I’m going to try and stretch my groceries for 2 weeks- which shouldn’t be a problem since I bought so much stuff this past weekend.

I intend to get back on track after this, so ya’ll are going to have to help hold me accountable! At the end of the month, I have some extra time off and will start a new whole 30 then. I need to get back on track. Even though I haven’t gained any weight back since I finished my first whole 30, I haven’t lost any more and I haven’t been feeling nearly as good as I did when I was following the rules.

So for the next couple of weeks, I will be eating through the not-so-good food I have left and plan to get started on a second whole 30 in which I am actually prepared and will also be prepared for when it is finished! That was my biggest downfall- not having an exit plan!

As a reminder, I don’t plan breakfasts (cereal or yogurt and fruit) or lunches (leftovers) but just dinners.

So for the next few weeks, here’s the meal plan I have based on what’s left and what I’ve bought:

Monday: Spaghetti with meaty vodka sauce
Tuesday: Tacos
Wednesday: Baked chicken strips and sweet potato fries
Thursday: Teriyaki-glazed salmon and brussels sprouts
Friday: Frozen Pizza
Saturday: Chicken Cordon Bleu with Veggies and potatoes
Sunday: Hamburgers and Fries
Monday: Chicken Legs and potatoes
Tuesday: Frozen Pizza
Wednesday: Baked fish and potatoes
Thursday: Slow-cooker Chicken
Friday: Frozen Pizza

I know, it’s mostly processed, terrible food! I really want to get that crap out of the house. I just can’t justify throwing it out when I’m trying to save money. Sooooo, we’ll be eating it all and replacing it with whole, healthy menu items in the future.

I’m a firm believer in everything in moderation (although this is pushing the boundaries!) so I will be eating my 5-9 servings of fruits and veggies every day still in order to mitigate the damage done by so much processed foods. I will fill up on the good and eat minimal portions on the bad and hopefully won’t feel awful at the end of these two weeks.

Saturday, I will go and fill up my shopping cart with amazing, healthy and whole foods and then we will be on our way to my April Challenge: Get Back to Healthy!
